Gatorpit – Vertical Stick Smoker

Above is my custom wood burning vertical smoker. Built by Gatorpit in Houston, Texas. In addition to the features below, I had a propane assist installed to help start the initial fire.

From Gatorpit’s website:

Total cooking capacity = 17.7 square feet.  This Gator functions and cooks low and slow or hot and fast. Gator’s unique internal design makes this cooker smoke meat just like a traditional Offset pipe smoker. But, offers a large cooking capacity in a smaller foot print.  A water pan can be placed on the lower portion of the food chamber for those Cookers that like to cook with a water pan in this style cooker. Also, remove the lower baffles and use as a charcoal or wood burning grill.  You get the best of both worlds:  Direct and Indirect cooking.

Smoking chamber is made from 1/4″ thick wall carbon steel plate. Four angle-framed sliding food trays 24″ deep x 26.5″ wide are constructed with 3/4″ angle for extra support and no sagging. 6″ clearance between trays, Two full size foil pans can rest on each tray, Upper and lower 3″ dial stainless steel temperature gauges, Commercial stainless steel cool-touch handles on  food chamber door, Front door is 1/4″ thick wall carbon steel plate, fully flanged to keep heat and smoke in the pit, Dual Birdhouse adjustable smoke stacks with stainless steel cool-touch handles, Adjustable and removable ¼” thick wall carbon steel baffles that allow a more even temperature air flow, 2″ drain located on the bottom to easily drain and clean out.

Firebox door is a 1/4″thick wall carbon steel plate, fully flanged to keep heat and smoke in the pit, Commercial stainless steel cool-touch handle on firebox chamber door, Sliding adjustable air-intake vents, Lower pull-out solid plate ash pan with handle, Pull-out angle framed ¼” thick wall charcoal/wood grate, Heavy duty side handles for pushing/pulling pit and for strapping down to secure on a trailer, Heavy duty commercial all-weather 6” casters (two locking/two rigid).

8-12 briskets to give an idea of cooking capacity.  Two to three briskets each meat rack.

As described above with standard features: 30” W x 36” Deep x 72” H 600 plus pounds apprx.
