Grilled Short Ribs – Mongolian Beef (PF Changs Copy Cat)
This is a fun spin on traditional Mongolian beef. I substitute flank stank with short ribs to add an awesome grilled flavor.

- 3-4 lbs Beef Short Ribs I use Costco's short ribs and they are amazing. Look for consistent thickness.
- 8 Green onions Chopped
Marinade
- 1 tsp Baking Soda
- 2 tsp Sugar
- 2 tbsp Corn Starch
- 2 tbsp Soy Sauce
- 2 tsp Rice Vinegar
- 4 tbsp Olive Oil
Sauce
- 4 tsp Toasted Sesame Oil
- 1.5 tsp Ground Ginger
- 2 tbsp Minced Garlic
- 1 cup Soy Sauce
- 1.5 cup Brown Sugar
- 3 tbsp Cold Water used for slurry at end
- 1.5 tbsp Corn Starch used for slurry at end
- 1 tbsp Sesame Seeds For serving
Instructions
Marinade
- Combine all marinade ingredients and whisk until combined. Combine with short ribs in a zip-lock bag (may need to split into two bags), seal and refrigerate for 2-3 hours, or overnight.
Beef Ribs
- Drain marinade and set out ribs for 30 minutes for the temperature to rise a bit.
- Grill ribs, searing them on high heat 3-4 minutes per side.
- Remove ribs and cut meat off bones. I also trim the hard fat during this step so it is a bit more pleasant to eat.
- Set beef to the side.
Sauce
- In a sauce pan, mix together toasted sesame oil, ginger, garlic, soy sauce, cup of water, and brown sugar. Stir and heat over medium high heat until brown sugar has dissolved.
- While sauce is cooking, create your corn starch slurry by mixing together the 1.5 tbsp of corn starch and 3 tbsp of water. You may need more based on how thick you like your sauce.
- Bring sauce to boil and add slurry. Continue to boil until sauce thickens.
Final Assembly
- Turn wok or skillet pan on high and add beef.
- Add 1 cup of sauce (more or less depending on how much sauce you like) and mix for 5 minutes until sauce becomes sticky and coats all the beef.
- Add in chopped green onions right before serving and sprinkle with sesame seeds.
- Serve over rice and enjoy!

This recipe makes a large batch of sauce, you can either half the sauce recipe or serve the extra over rice.
